Cloves in Tanzania are harvested when the flowers have turned from green to a pinkish-red tone. We also look for blossoms with measures of at least 1.5 centimeters in length. Our trained workers pick each flower with its adorning petals and keep it in the basket. Then the Tanzania clove flowers dry in rows over raised wire mesh. The shape of the whole clove is like a small, reddish-brown spike, usually around 0.8 mm – 19 mm in length. Cloves can be used as whole or ground, and they have a very strong, pungent flavor and fragrance. You will notice sweetness, and bitterness, with a noticeable amount of savories.
Grade the cloves in Tanzania depending on their floating nature on water and appearance.
